We are a third generation Mom and Pop store that takes pride in sticking to tradition and serving quality cuts and service to the community.
The original Mom and Pop were V.C. and Hazel Carter that moved here in 1964 and ran the business for Hazel and Roland Ehresman, and bought it in 1977. The Carters retired in 1989 and daughter Velda, who had since married Mike Plankenhorn, began operating it and bought it in 1992. Mike and Velda learned a lot from her parents and continued to grow and strengthen the business with custom processing of beef, pigs, lambs, goats, deer, and the occasional buffalo. Mike and Velda also considered the community needs and wants and widened the variety of meats offered on the retail side. Even though Mike and Velda pushed their twin sons to consider a different career path due to the extreme hard work and lack of time away, their son Josh graduated with a bachelor’s degree from K-State in 2004 and Josh and his wife Lyndsay, moved back home to be a part of the business in 2005.
After MANY years of hard work, Mike and Velda retired in 2023 and son Josh and wife Lyndsay proudly bought the family business at this time. Josh was so thankful to be able to work with his parents for so many years to comfortably learn all sides of the business and to be able to ensure the continued quality of service. With being third family generation owners, their sons desire to be the 4th generational owner, and after much thought and consideration, Josh and Lyndsay changed the business name from “Ehresman Packing” to “Plank’s Meats” in spring of 2026 vowing that the name will be the only thing to change. The quality and commitment of service to the community remains top priority!
